The Cliff House Resort & Spa Has Blueberry Recipes That Are Made to Chill

Blueberries are one of nature’s most delicious super foods. Wild blueberries are Maine’s official state berry – and August is the month to put them in everything from savory sauces to ice-cold smoothies. 

The Cliff House Resort & Spa on Maine’s south coast uses blueberries as an ingredient everywhere from its cliff-top dining room (halibut with blueberry beurre blanc is a favorite) to recipes that are easy to whip up at home.

The Resort’s Chilled Maine Blueberry Champagne Bisque, for example, is a breeze to make. It’s a heady blend of blueberries, champagne and chardonnay with a dash of nutmeg and honey. The perfect cooler for steamy summer nights and partying poolside.

Blueberries are also a signature ingredient in the Resort’s world-class spa. Specialties include a soothing Blueberry Body Wrap and Cliff House Signature Manicure & Pedicure with moisturizing Blueberry Smoothie Mask.

Every August Maine towns celebrate with blueberry festivals, pie eating contests and blueberry pancake breakfasts. The Cliff House, which opened in 1872, is also celebrating. This summer it’s toasting its 140th Anniversary with a Blueberry Bellini and other specials.

Recipe for Chilled Maine Blueberry Champagne Bisque

 Ingredients

4 pints Maine Wild Blueberries

½ bottle Champagne

2 cups Chardonnay

1 pint fresh strawberries

1 dash ground nutmeg

4 teaspoons honey

2 tablespoons granulated sugar

 

Directions

Combine all ingredients in a medium saucepan and simmer on low heat for

30 minutes. Cool and purée in a blender. Serve ICE COLD on a hot day.

Yield: 2 quarts
